Holiday Salads

It's day three of delicious recipes from our family here at Langevin! This batch was submitted by our wonderful colleagues in the Client Services department. We hope you enjoy these tried, tested, and true favorites! Stay tuned for the full menu on December 21!

Christmas Salad


Ingredients
170g marinated artichokes
8 medium sized tomatoes
1 cup romaine lettuce, bite-size
4 peppers: green, yellow, and red, cut in bite-size pieces
1/2 a small red onion, sliced
1 orange or 2 clementines
1/2 to 1 cup kalamata olives
1 cup fresh dill, washed and drained
1-2 cups feta cheese, diced in cubes

Dressing:
1 large lemon
1 tsp sugar
1 tsp Dijon mustard
2 large garlic cloves
1/2 cup fresh basil
1/2 cup olive oil
1/2 tsp salt
1/2 tsp pepper
1/4 tsp ground oregano

Directions:
Drain artichokes and pat dry, then cut in half.
Cut tomatoes in half, then into 3 sections. Remove seeds and juice.
Peel oranges, cut in half.
Chop fresh dill.
Mix all salad ingredients together.

Dressing:
Squeeze lemon and put in a small bowl.
Add sugar and Dijon mustard and mix together.
Chop garlic finely and cut basil into small pieces and add to bowl.
Add olive oil, salt, pepper and oregano.
Mix well together. Add to salad ingredients.

24 Hour Salad


Ingredients:
6 cups shredded iceberg lettuce
½ cup chopped celery
½ cup chopped (any color) bell pepper
¼ cup chopped green onions and tips
½ cup frozen green peas
1 cup mayonnaise
½ cup sour cream
2 cups shredded cheddar cheese
4-5 slices of bacon cooked and crumbled (optional)

Directions:
In a large glass bowl, layer ingredients in order given.
Mix mayonnaise and sour cream together before spreading on top. Do not mix salad. Sprinkle cheese and top with crumbled bacon. Tightly cover bowl with plastic wrap or lid and refrigerate for 24 hours before serving.
*For other variations, you can add/substitute your favorite ingredients, such as hard boiled eggs, mushrooms and carrots.

5 Cup Ambrosia Salad


Ingredients:

1 cup coconut
1 cup mandarin orange segments, drained
1 cup crushed pineapple, drained
1 cup sour cream or 1 cup lemon yogurt
1 cup miniature marshmallows

Directions:
Combine all ingredients except marshmallows; chill for several hours.
Add marshmallows right before serving.
*Also good with chopped pecans added!
